California Pizza Kitchen’s Spicy Buffalo Cauliflower

Buffalo Sauce Ingredients:
1 ½ cups Sriracha
1.5 ounces soy sauce
1.5 ounces fresh lime juice
4 tablespoons butter (cut into small cubes)

Preparation:
1. Combine Sriracha sauce, soy sauce and lime juice in a bowl, whisk until blended. Transfer the sauce to a nonstick pan and add butter.

2. Over medium-high heat, cook sauce for about four minutes, stirring frequently to help melt the butter. Once the butter is completely melted, continue cooking until the sauce starts to boil.

3. Remove from the flame, transfer to a container, and set aside.

Spicy Buffalo Cauliflower Ingredients:
2 pounds cauliflower, cut into florets
2 cups buttermilk
2 cups rice flour*
2 cups Buffalo sauce
6 ounces gorgonzola cheese, crumbled
¾ cup celery, julienned
¾ cup scallions, julienned
¼ fresh cilantro, chopped
1 cup ranch dressing

Preparation:
1. Preheat frying oil to 350°F.

2. Add buttermilk to a large mixing bowl. Add flour to a separate large mixing bowl.

3. Place cauliflower florets into buttermilk and toss to coat thoroughly (this may be done in small batches). Shake off the excess buttermilk and transfer cauliflower into rice flour, hand massage florets to coat thoroughly.

4. Shake off excess flour and repeat step 3 to bread the cauliflower a second time. Transfer to a sheet pan until ready to fry.

5. Fry breaded cauliflower in batches for approximately 2 ½ minutes or until golden brown and crispy. Drain well.

6. Toss fried cauliflower in a large bowl with Buffalo sauce until well coated. Serve on a platter topped with gorgonzola, celery, scallions, and cilantro, with ranch dressing on the side.

*Rice flour creates a crispy texture but all purpose flour may be substituted.
