Virtuous Super Bowl Snacks

Whether you’re a diehard NFL fan or just in it for the commercials, there’s no denying that the Super Bowl is the biggest sporting event of the year. As we watch the Philadelphia Eagles take on the New England Patriots this Sunday, it’s important to keep your viewing party satisfied with delicious dips, drinks, and dishes, but let’s admit it: all that tailgate food can be a little heavy. Between the nachos, pizza, potato skins, and 10-layer dips, it’s common that the only greens on the table are celery sticks and garnish! That’s why we reached out to Marcella Dilonardo of Hey Modest Marce for a healthy spin on a classic recipe. Read on to check out her take on game day “wings” and pick up her kitchen supplies at your local Simon.

Cauliflower has become a very versatile vegetable over the last decade. You may be familiar with cauliflower pizza & cauliflower steak, but have you ever tried a cauliflower buffalo wing? With the Super Bowl only a few days away, these “wings” are the perfect healthy twist on a classic to serve for game day. They are lightly battered & tossed in a homemade buffalo sauce.

I also made a light yogurt-based blue cheese dip because I personally can’t have wings without dipping them in a tangy blue cheese! It’s also perfect to serve alongside some crunchy vegetables. The dip can be made the day of but for best results, prepare the night before to really let the blue cheese flavor meld into the yogurt.

Buffalo Cauliflower Wings and Yogurt Blue Cheese Dip

Ingredients:

“Wings”:
1 head of cauliflower
1 cup all purpose flour, sifted
2 tsp garlic powder
1 tsp ground paprika
1/2 tsp sea salt
1/2 tsp black pepper
1 1/3 cup milk

Buffalo Sauce:
3/4 cup hot sauce
1/4 cup unsalted butter
1/4 tsp garlic powder
Salt and pepper, to taste

Blue Cheese Dip:
1 cup plain yogurt
1/4 cup mayonnaise
2 tsp lime or lemon juice, freshly squeezed
1 tsp garlic powder
Salt and pepper, to taste
1/2 cup blue cheese, crumbled

Directions:

1. Preheat oven to 400°F. Chop cauliflower florets into bite size pieces & place in a large mixing bowl.

      2. In a separate mixing bowl, sift together the flour, garlic powder, paprika, salt & pepper. Add the milk and whisk until batter is smooth.

      3. Pour mixture over the cauliflower florets and toss to coat. Transfer to a lined baking sheet.

      4. Cook cauliflower for 25 minutes, rotating once halfway through. While the cauliflowers are cooking, prepare the buffalo sauce.

      5. In a saucepan over low heat, add hot sauce and butter — melt together until combined. Stir in garlic powder, salt and pepper, remove from heat and set aside until ready to use.

6. Remove cauliflower from the oven and toss to combine with the buffalo sauce. Place back on baking sheet, turn oven up to 425°F, and bake for an additional 25 minutes, or until desired texture is reached.

7. Serve immediately with blue cheese dip!

Blue Cheese Dip:

In a small mixing bowl whisk together the yogurt, mayonnaise, lime juice, garlic powder, salt and pepper until smooth. Fold in the blue cheese, then transfer to a sealed container and store until ready to serve.
